O Ascorbato \u00e9 a sua forma ativa, o qual participa como cofator de enzimas, s\u00edntese de col\u00e1geno, carnitina, ATP e noraepinefrina, auxilia a convers\u00e3o de colesterol em \u00e1cidos biliares, participa do sistema de defesa e atua como importante antioxidante.<\/p>\n<p>Sua absor\u00e7\u00e3o e excre\u00e7\u00e3o s\u00e3o controladas pela concentra\u00e7\u00e3o sangu\u00ednea e nos tecidos. A absor\u00e7\u00e3o, por transporte passivo ou ativo dependente de s\u00f3dio, \u00e9 r\u00e1pida e eficiente quando existe defici\u00eancia, podendo atingir uma absor\u00e7\u00e3o de 80 a 95% do conte\u00fado de vitamina C do alimento.
