No corpo humano, as maiores quantidades desse mineral se encontram nos ossos e m\u00fasculo esquel\u00e9tico.<\/p>\n<p>Nos alimentos, o zinco est\u00e1 associado \u00e0s mol\u00e9culas org\u00e2nicas ou na forma de sais inorg\u00e2nicos que, durante a digest\u00e3o, s\u00e3o liberados como \u00edons livres e ligam-se a amino\u00e1cidos, fosfatos e \u00e1cidos org\u00e2nicos para serem mais bem absorvidos. A absor\u00e7\u00e3o acontece, principalmente, na por\u00e7\u00e3o proximal do intestino delgado, dependente de transportadores espec\u00edficos e tamb\u00e9m da concentra\u00e7\u00e3o do mineral na dieta, sendo absorvido cerca de 20 a 40% do zinco diet\u00e9tico. Sua biodisponibilidade \u00e9 afetada por taninos, fitato e oxalato, que diminuem a sua absor\u00e7\u00e3o, e por prote\u00ednas, que a favorecem.<\/p>\n<p>O transporte de zinco das c\u00e9lulas intestinais para o f\u00edgado e, posteriormente, para a circula\u00e7\u00e3o \u00e9 feito atrav\u00e9s da liga\u00e7\u00e3o do zinco com albumina, \u03b1-macroglobulina, transferrina, ciste\u00edna ou histidina. A excre\u00e7\u00e3o acontece pelas fezes, urina, descama\u00e7\u00e3o da pele, cabelo, menstrua\u00e7\u00e3o, suor e atrav\u00e9s do s\u00eamen (\u2248 9\u00b5mol por ejacula\u00e7\u00e3o), sendo sua homeostase controlada pelo intestino delgado, f\u00edgado e p\u00e2ncreas, atrav\u00e9s de mecanismos que favorecem ou impedem a liga\u00e7\u00e3o do zinco com carreadores espec\u00edficos no intestino.<\/p>\n<p>O zinco se destaca por estar envolvido na fun\u00e7\u00e3o biol\u00f3gica de mais de 300 enzimas, exercendo importante papel catal\u00edtico, estrutural e regulat\u00f3rio, com efeito na s\u00edntese de DNA, desenvolvimento cerebral, reprodu\u00e7\u00e3o e desenvolvimento fetal, estabilidade de membrana, forma\u00e7\u00e3o \u00f3ssea, cicatriza\u00e7\u00e3o de feridas, al\u00e9m de ser considerado um nutriente anti-inflamat\u00f3rio e antioxidante.<\/p>\n<p>O n\u00edvel de zinco no corpo pode ser investigado atrav\u00e9s do zinco plasm\u00e1tico, zinco eritrocit\u00e1rio, zinco no cabelo ou na urina (por \u00a0avalia\u00e7\u00e3o de urina de 24h).<\/p>\n<p>Sua defici\u00eancia, considerada de grande import\u00e2ncia epidemiol\u00f3gica, est\u00e1 relacionada principalmente a baixa ingest\u00e3o de alimentos fonte. No Brasil, por exemplo, 20% da popula\u00e7\u00e3o apresenta risco de ingest\u00e3o inadequada de zinco.
