A primeira lei sobre o tema (n\u00ba 1.944, de 14 de agosto de 1953) determinava a obrigatoriedade da ioda\u00e7\u00e3o do sal de consumo humano nas \u00e1reas de b\u00f3cio end\u00eamico, na propor\u00e7\u00e3o de 10 mg de iodo por quilograma de sal, utilizando iodeto de s\u00f3dio ou iodeto de pot\u00e1ssio.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Ap\u00f3s diversas mudan\u00e7as, em 2013 foi aprovada a altera\u00e7\u00e3o da concentra\u00e7\u00e3o para<\/span><b> 15 a 45 mg de iodo por kg de sal<\/b><span style=\"font-weight: 400;\">, que perdura at\u00e9 os dias atuais.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Assim, o sal de cozinha \u00e9 o verdadeiro respons\u00e1vel por grande parte da ingest\u00e3o de iodo na popula\u00e7\u00e3o brasileira. Vale ressaltar que <\/span><b>outras fontes alternativas ao sal (como sal rosa e sal negro) n\u00e3o possue a adi\u00e7\u00e3o de iodo<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Qual_e_a_biodisponibilidade_do_iodo\"><\/span><b>Qual \u00e9 a biodisponibilidade do iodo?<\/b><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Em um organismo humano sadio e em condi\u00e7\u00f5es normais, <\/span><b>mais de 90% da ingest\u00e3o de iodo \u00e9 absorvida <\/b><span style=\"font-weight: 400;\">no est\u00f4mago e duodeno.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Entretanto, alguns alimentos denominados \u201cbociog\u00eanicos\u201d possuem subst\u00e2ncia que podem interferir na absor\u00e7\u00e3o ou uso desse mineral pela tireoide. As principais subst\u00e2ncias s\u00e3o:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 300;\" aria-level=\"1\"><b>Glicos\u00eddeos cianog\u00eanicos<\/b><span style=\"font-weight: 400;\">: s\u00e3o capazes de diminuir a absor\u00e7\u00e3o de iodo pela tireoide e competem com o iodo pela capta\u00e7\u00e3o na gl\u00e2ndula. Presente em alimentos como mandioca, milho, broto de bambu, batata doce, p\u00eassego, br\u00f3colis, couve flor, am\u00eandoa e soja. Por\u00e9m, em geral, s\u00e3o totalmente inativadas pelos processos culin\u00e1rios usuais.<\/span><\/li>\n<li style=\"font-weight: 300;\" aria-level=\"1\"><b>Flavon\u00f3ides<\/b><span style=\"font-weight: 400;\">: prejudicam a atividade da enzima tireoperoxidase e diminui a incorpora\u00e7\u00e3o de iodo pela tireoide. S\u00e3o exemplos de alimentos que possuem essa subst\u00e2ncia s\u00e3o soja e baba\u00e7u.<\/span><\/li>\n<li style=\"font-weight: 300;\" aria-level=\"1\"><b>Perclorato e nitrato<\/b><span style=\"font-weight: 400;\">: competem pelo mesmo transportador que o iodo, por isso, diminui seu transporte na gl\u00e2ndula.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Al\u00e9m dessas subst\u00e2ncias bociog\u00eanicas, a<\/span><b> defici\u00eancia de alguns nutrientes, como sel\u00eanio, ferro, zinco e vitamina A<\/b><span style=\"font-weight: 400;\"> tamb\u00e9m pode interferir no uso do iodo para s\u00edntese de horm\u00f4nios tireoidianos.<\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Conclusao\"><\/span><b>Conclus\u00e3o<\/b><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Como visto, o iodo \u00e9 um micronutriente fundamental para o funcionamento adequado da tireoide e para processos vitais como crescimento, desenvolvimento neurol\u00f3gico, regula\u00e7\u00e3o metab\u00f3lica e resposta imune.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Embora esteja presente em algumas fontes alimentares, o sal iodado continua sendo a principal estrat\u00e9gia de sa\u00fade p\u00fablica para garantir ingest\u00e3o adequada na popula\u00e7\u00e3o.
